Ingredients
- Chicken thighs, boneless and skinless1 kg
- Suya spice mix (Yaji)100g
- Vegetable oil4 tbsp
- Onion, sliced1 large
- Tomatoes, sliced2 medium
- Lemon juice2 tbsp
- Saltto taste
- Black pepperto taste

Cut chicken thighs into bite-sized pieces.

In a bowl, combine chicken pieces with 2 tbsp vegetable oil, lemon juice, salt, and black pepper. Marinate for at least 30 minutes.

Thread marinated chicken onto skewers.

Generously coat the chicken skewers with suya spice mix (Yaji), ensuring an even layer.

Preheat grill or grill pan to medium-high heat.

Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and has a nice char.

While chicken is grilling, mix remaining 2 tbsp vegetable oil with any leftover suya spice mix.

Brush the cooked chicken skewers with the spiced oil mixture.

Serve hot, garnished with sliced onions and tomatoes.
