A classic South African dessert, this Malva Pudding is a sweet, spongy apricot-flavored cake with a rich, creamy caramel sauce poured over it while hot. Served warm, it's incredibly comforting.

Ingredients
- All-purpose flour250g
- Baking soda1 tsp
- Salt1/4 tsp
- Butter, softened125g
- Sugar200g
- Eggs2 large
- Apricot jam2 tbsp
- Milk180ml
- Vinegar1 tsp
- Heavy cream200ml
- Butter100g
- Brown sugar150g
- Water100ml

Preheat oven to 180°C (350°F). Grease and flour a baking dish.

In a large bowl, whisk together flour, baking soda, and salt.

In a separate bowl, cream together softened butter and sugar until light and fluffy.

Beat in eggs one at a time, then stir in apricot jam.

In a small bowl, combine milk and vinegar. Let stand for 5 minutes.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk mixture, beginning and ending with dry ingredients. Mix until just combined.

Pour batter into the prepared baking dish and bake for 30-40 minutes, or until a skewer inserted into the center comes out clean.

While the pudding bakes, prepare the sauce: In a saucepan, combine cream, butter, brown sugar, and water. Heat gently, stirring until butter and sugar are dissolved. Bring to a simmer and cook for 5 minutes.

Once the pudding is out of the oven, poke holes all over the top with a skewer. Pour the hot sauce evenly over the hot pudding.

Let the pudding stand for at least 10 minutes to absorb the sauce before serving warm.
