Ingredients
- Chicken thighs1.5 lbs
- Pita bread4 large
- Greek yogurt1 cup
- Cucumber1/2
- Garlic2 cloves
- Lemon juice2 tbsp
- Olive oil1/4 cup
- Dried oregano1 tbsp
- Paprika1 tsp
- Saltto taste
- Black pepperto taste
- Tomatoes2 medium
- Red onion1/2 medium
- Fresh dill2 tbsp, chopped

For the tzatziki: Grate the cucumber and squeeze out excess water. Mince garlic. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Season with salt and pepper. Refrigerate.

For the chicken marinade: Cut chicken thighs into bite-sized pieces. In a bowl, whisk together olive oil, oregano, paprika, salt, and pepper. Add chicken pieces and toss to coat. Let marinate for at least 30 minutes (or up to 4 hours in the refrigerator).

Grill or pan-fry the marinated chicken pieces until cooked through and slightly charred.

Warm the pita bread on the grill or in a dry pan.

Slice tomatoes and red onion thinly.

Assemble the gyros: Spread a generous amount of tzatziki sauce on each warm pita. Top with grilled chicken, sliced tomatoes, and red onion. Fold or roll the pita.
