Ingredients
- Cavatappi pasta12 ounces
- Butter4 tablespoons
- Garlic, minced2 cloves
- Heavy cream1.5 cups
- Fontina cheese, grated2 cups
- Gouda cheese, grated1 cup
- Parmesan cheese, grated1/2 cup
- Salt3/4 teaspoon
- Black pepper1/2 teaspoon
- Truffle oil2 tablespoons
- Fresh chives, chopped2 tablespoons

Cook cavatappi pasta according to package directions until al dente. Drain and set aside.

In a large saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Pour in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes until slightly reduced.

Reduce heat to low. Gradually add Fontina, Gouda, and Parmesan cheeses, stirring until melted and the sauce is smooth.
