
Classic Potato Leek Soup

Ingredients
- Leeks4 cups, white and light green parts only, thinly sliced
- Potatoes2 lbs, peeled and diced
- Unsalted Butter4 tablespoons
- Chicken Broth or Vegetable Broth6 cups
- Heavy Cream1 cup
- Saltto taste
- Black Pepperto taste
- Fresh Chivesfor garnish

Wash the sliced leeks thoroughly to remove any grit. Pat them dry.

In a large pot or Dutch oven, melt the butter over medium heat.

Add the leeks and sauté until softened, about 5-7 minutes, being careful not to brown them.

Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are very tender, about 15-20 minutes.

Carefully transfer the soup to a blender (in batches if necessary) or use an immersion blender to puree until smooth and creamy.

Return the soup to the pot. Stir in the heavy cream. Heat gently, but do not boil.

Season with salt and black pepper to taste.
