Ingredients
- Ripe tomatoes2 lbs
- Yellow onion1 medium
- Garlic cloves3
- Vegetable broth4 cups
- Heavy cream1/2 cup
- Butter2 tbsp
- Olive oil1 tbsp
- Sugar1 tsp
- Fresh basil1/4 cup, chopped
- Saltto taste
- Black pepperto taste

Roughly chop tomatoes, onion, and garlic.

Heat butter and olive oil in a large pot or Dutch oven over medium heat.

Add chopped onion and cook until softened, about 5-7 minutes.

Add garlic and cook for 1 minute more until fragrant.

Add chopped tomatoes, vegetable broth, sugar, salt, and pepper. Bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes, or until tomatoes are very soft.

Carefully transfer the soup to a blender (in batches if necessary) or use an immersion blender to puree until smooth.

Return the soup to the pot. Stir in the heavy cream and chopped basil.

Heat gently for a few minutes until warmed through, but do not boil.
