- Broccoli4 cups, chopped
- Sharp cheddar cheese1.5 cups, shredded
- Smoked Gouda cheese0.5 cup, shredded
- Butter3 tablespoons
- Yellow onion1 cup, chopped
- Jalapeño pepper1, seeded and minced
- Garlic2 cloves, minced
- All-purpose flour1/4 cup
- Vegetable broth4 cups
- Milk2 cups
- Cayenne pepper1/4 teaspoon (or to taste)

Melt butter in a large pot over medium heat. Add onion and jalapeño, cook until softened, about 6-8 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Whisk in the flour and cook for 1-2 minutes, stirring constantly.

Gradually whisk in the vegetable broth until smooth. Bring to a simmer.

Add the chopped broccoli and cook until tender, about 10-15 minutes.

Reduce heat to low. Stir in the milk. Do not boil.
