Trim and blanch green beans in boiling salted water for 5-7 minutes until tender-crisp. Drain well.

In a saucepan, melt butter over medium heat. Add shallots and cook until softened, about 3-4 minutes. Add garlic and cook for 1 minute more.

Whisk in flour and cook for 1 minute, stirring constantly, to form a roux.

Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until the sauce thickens, about 5-7 minutes.

Remove from heat. Stir in shredded Gruyere cheese, Dijon mustard, salt, and pepper until cheese is melted and sauce is smooth.

Gently fold in the blanched green beans and crumbled bacon.
