Ingredients
- Cauliflower1 large head
- Butter50g
- All-purpose flour50g
- Milk500ml
- Cheddar cheese, grated150g
- Saltto taste
- Black pepperto taste
- Nutmeg, gratedpinch

Preheat oven to 200°C (180°C fan/Gas Mark 6).

Break the cauliflower into florets and steam or boil until just tender (about 5-7 minutes). Drain well.

Melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux.

Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the sauce thickens.

Remove from heat and stir in most of the grated cheddar cheese until melted. Season with salt, pepper, and nutmeg.

Place the cauliflower in an ovenproof dish. Pour the cheese sauce over the cauliflower.

Sprinkle the remaining cheese over the top. Bake for 20-25 minutes, or until golden brown and bubbling.
