Ingredients
- Chicken thighs, boneless, skinless1.5 lbs
- Plain yogurt1 cup
- Ginger, grated2 tbsp
- Garlic, minced2 tbsp
- Garam masala2 tsp
- Turmeric powder1 tsp
- Cumin powder1 tsp
- Cayenne pepper1/2 tsp
- Lemon juice1 tbsp
- Saltto taste
- Vegetable oil2 tbsp
- Onion, finely chopped1 large
- Tomatoes, crushed28 oz can
- Tomato paste2 tbsp
- Heavy cream1/2 cup
- Fenugreek leaves (kasuri methi)1 tbsp
- Fresh cilantro, choppedfor garnish

Cut chicken into 1-inch pieces. In a bowl, combine yogurt, ginger, garlic, garam masala, turmeric, cumin, cayenne, lemon juice, and salt. Add chicken, mix well, and marinate for at least 30 minutes (or up to overnight in the refrigerator).

Preheat oven to 400°F (200°C) or heat a grill. Thread chicken onto skewers or place on a baking sheet lined with parchment paper. Grill or bake for 15-20 minutes, until cooked through and slightly charred.

While chicken cooks, heat vegetable oil in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.

Stir in crushed tomatoes and tomato paste. Cook for 5 minutes, stirring occasionally.

Add garam masala, turmeric, cumin, cayenne pepper, and salt. Cook for another 2 minutes until fragrant.

Reduce heat to low. Stir in heavy cream and fenugreek leaves. Simmer gently for 10 minutes, allowing flavors to meld. Do not boil after adding cream.

Add the cooked chicken tikka pieces to the sauce. Stir to combine and heat through for 5 minutes.
