Ingredients
- Cooked chicken breast or thighs, cubed1.5 lbs
- Butter or Ghee2 tbsp
- Onion, finely chopped1 medium
- Garlic, minced1 tbsp
- Ginger paste1 tsp
- Garam masala1.5 tsp
- Cumin powder1 tsp
- Paprika1 tsp
- Turmeric powder1/2 tsp
- Crushed tomatoes15 oz can
- Coconut milk (full fat)1 cup
- Sugar1 tsp
- Saltto taste
- Fresh cilantro, choppedfor garnish

Melt butter or ghee in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic and ginger paste, cook for 1 minute until fragrant.

Stir in garam masala, cumin, paprika, and turmeric. Cook for 30 seconds.

Pour in crushed tomatoes and coconut milk. Add sugar and salt. Bring to a simmer.

Add the cooked chicken cubes to the sauce. Stir well and simmer gently for 10-15 minutes, allowing the sauce to thicken slightly and the chicken to heat through.

Taste and adjust seasoning if needed. Garnish with fresh cilantro before serving.
