Ingredients
- Lamb shoulder or neck, bone-in1 kg
- Potatoes, peeled and roughly chopped1 kg
- Onions, peeled and sliced3 large
- Carrots, peeled and thickly sliced4 medium
- Lamb or beef stock1 liter
- Fresh parsley, chopped1 bunch
- Saltto taste
- Black pepperto taste

Brown the lamb pieces in a large, heavy-bottomed pot over medium-high heat. Remove lamb and set aside.

Add the sliced onions to the pot and cook until softened, about 5-7 minutes.

Return the lamb to the pot. Add the chopped potatoes and sliced carrots.

Pour in the lamb or beef stock, ensuring the meat and vegetables are mostly submerged. Add water if needed.

Season generously with salt and black pepper.

Bring the stew to a simmer, then reduce heat to low, cover, and cook for at least 2-3 hours, or until the lamb is very tender and the vegetables are soft.

Stir in most of the chopped parsley during the last 15 minutes of cooking.

Adjust seasoning if necessary. Serve hot, garnished with remaining parsley.
