- Worcestershire sauce1 tbsp
- Cayenne pepper1/4 tsp
- Egg yolk1
- Rye bread4 slices
- Bacon rashers4
- Butterfor toasting

Grate the cheddar cheese.

In a saucepan, combine the grated cheese, stout, Worcestershire sauce, and cayenne pepper.

Heat gently over a low heat, stirring constantly until the cheese is melted and the sauce is smooth and thick. Do not boil.

Remove from heat and stir in the egg yolk. Mix well until fully incorporated.
