Ingredients
- All-purpose flour2 cups
- Granulated sugar1 cup
- Eggs2 large
- Vegetable oil1/2 cup
- Shredded zucchini2 cups
- Vanilla extract1 teaspoon
- Baking soda1 teaspoon
- Salt1/2 teaspoon
- Ground cinnamon1 teaspoon
- Ground nutmeg1/4 teaspoon
- Chopped walnuts or pecans (optional)1/2 cup

Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl, whisk together eggs, vegetable oil, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

Fold in the shredded zucchini and chopped nuts (if using).

Pour the batter into the prepared loaf pan.

Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
