Ingredients
- Shredded rotisserie chicken2 cups
- Taco seasoning packet1 tbsp
- Large flour tortillas8
- Shredded Colby Jack cheese2 cups
- Vegetable oil1 tbsp
Steps

In a bowl, toss shredded rotisserie chicken with taco seasoning.

Lay out four tortillas. Sprinkle half of the cheese over one half of each tortilla.

Spoon the seasoned chicken mixture over the cheese.

Top the chicken with the remaining cheese.

Fold the other half of the tortilla over the filling.

Heat oil in a non-stick skillet over medium-high heat.

Cook quesadillas for 2-3 minutes per side, until golden brown and cheese is melted. Repeat with remaining quesadillas.
