Ingredients
- Cooked chicken (rotisserie or leftover)2 cups, shredded or cubed
- Soy sauce1/3 cup
- Rice vinegar3 tbsp
- Brown sugar3 tbsp
- Ketchup2 tbsp
- Cornstarch1 tbsp
- Garlic powder1 tsp
- Ground ginger1/2 tsp
- Red pepper flakes1/2 tsp (or to taste)
- Sesame oil1 tsp
- Water1/4 cup
- Vegetable oil (optional, for sautéing)1 tbsp
- Scallions, chopped (for garnish)1
- Sesame seeds, toasted (for garnish)

If using raw chicken, quickly pan-fry or bake bite-sized pieces until cooked through. If using pre-cooked chicken, ensure it's bite-sized.

In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, ketchup, cornstarch, garlic powder, ground ginger, red pepper flakes, sesame oil, and 1/4 cup water until smooth.

Heat 1 tbsp vegetable oil in a wok or skillet over medium-high heat (optional, if chicken is already cooked and you want to warm it). Add the cooked chicken and stir-fry for 1-2 minutes.

Pour the sauce mixture over the chicken. Stir continuously as the sauce thickens, coating the chicken evenly. This should take about 2-3 minutes.

Once the sauce is thick and glossy, remove from heat. Garnish with chopped scallions and toasted sesame seeds.
