Ingredients
- Chicken breast2 lbs
- Penne pasta1 lb
- Olive oil2 tbsp
- Onion1 medium
- Garlic4 cloves
- Crushed tomatoes28 oz can
- Heavy cream1 cup
- Parmesan cheese, grated1 cup
- Mozzarella cheese, shredded2 cups
- Dried oregano1 tsp
- Dried basil1 tsp
- Saltto taste
- Black pepperto taste
- Fresh parsley, choppedfor garnish

Preheat oven to 375°F (190°C). Cook pasta according to package directions until al dente. Drain and set aside.

While pasta cooks, dice chicken breast into bite-sized pieces. Season with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.

Add chopped onion to the same skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.

Stir in crushed tomatoes, heavy cream, oregano, basil, salt, and pepper. Bring to a simmer and cook for 5 minutes.

Stir in cooked chicken and half of the grated Parmesan cheese into the sauce.

Add the cooked pasta to the skillet with the sauce and chicken. Stir to combine.

Pour the mixture into a 9x13 inch baking dish. Top with shredded mozzarella and the remaining Parmesan cheese.

Bake for 20-25 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
