- Provolone cheese slices4 slices
- Brioche buns4

- Bacon8 slices
- Yellow onion, finely chopped1
- Brown sugar1/4 cup
- Balsamic vinegar2 tbsp
- Maple syrup1 tbsp

Prepare the bacon jam: Cook bacon until crisp, then crumble. In the same pan, sauté finely chopped onion until softened. Add crumbled bacon, brown sugar, balsamic vinegar, and maple syrup. Simmer until jam-like consistency forms. Set aside.

Divide ground beef into 4 portions and form loose balls.

Heat a cast-iron skillet or griddle over medium-high heat.

Place beef balls on the hot surface and immediately smash them thin.

Season patties with salt and pepper.

Sear for 1-2 minutes per side. Top with provolone cheese during the last minute of cooking.
