Ingredients
- Leg of lamb1 (approx. 1.5kg)
- Minced garlic2 tbsp
- Dried rosemary1 tbsp
- Dried thyme1 tbsp
- Olive oil2 tbsp
- Salt1 tsp
- Black pepper1 tsp
- Water100ml

Preheat oven to 200°C (180°C fan/Gas Mark 6).

Mix minced garlic, dried rosemary, dried thyme, olive oil, salt, and pepper in a small bowl.

Rub the herb and garlic mixture all over the leg of lamb.

Place the lamb in a roasting tin. Add water to the bottom of the tin.

Roast for 20 minutes at 200°C.

Reduce oven temperature to 180°C (160°C fan/Gas Mark 4). Continue roasting for approximately 1 hour to 1 hour 15 minutes, or until cooked to your liking (about 25 minutes per 500g). Baste occasionally.

Remove from oven, cover with foil, and rest for 15-20 minutes before carving.
