Steps

    Preheat oven to 400°F (200°C). Peel and cube sweet potatoes. Toss with 1 tbsp olive oil, salt, and pepper. Roast for 25-30 minutes.

    While sweet potatoes roast, heat a skillet over medium-high heat. Add ground beef and cook until browned. Drain fat.

    Add minced garlic and grated ginger to the beef, cook for 1 minute until fragrant.

    In a small bowl, whisk together honey, gochujang, soy sauce, sesame oil, and rice vinegar. Pour this sauce over the beef and stir to coat. Cook for 2-3 minutes until the sauce thickens slightly.

    Assemble the bowls: Divide the saucy beef among four bowls. Top with roasted sweet potatoes and dollops of cottage cheese.
