Ingredients
- Italian sausage (sweet or hot)1.5 lbs
- Bell peppers (mixed colors, e.g., red, green, yellow)3 large
- Yellow onion1 large
- Garlic3 cloves
- Crushed tomatoes14.5 oz can
- Olive oil2 tbsp
- Saltto taste
- Black pepperto taste
- Fresh parsley (for garnish)2 tbsp, chopped

Slice the Italian sausage into 1-inch pieces. Slice the bell peppers and onion into strips. Mince the garlic.

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the sausage and cook until browned on all sides. Remove sausage and set aside.

Add the sliced bell peppers and onion to the same skillet. Cook, stirring occasionally, until softened, about 8-10 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Stir in the crushed tomatoes, salt, and pepper. Bring to a simmer.

Return the browned sausage to the skillet. Reduce heat to low, cover, and simmer for at least 20 minutes, or until the sausage is cooked through and the flavors have melded.
