- Pork chops4 (3/4-inch thick)
- All-purpose flour1/3 cup
- Mixed mushrooms (e.g., cremini, shiitake)10 oz, sliced
- Shallots2, finely chopped
- Beef broth1 cup
- Sour cream1/2 cup
- Butter2 tbsp
- Vegetable oil1 tbsp
- Paprika1/2 tsp
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish

Season pork chops with salt and pepper. Dredge in flour.

Heat oil and 1 tbsp butter in a skillet over medium-high heat. Sear pork chops until golden brown and cooked through. Remove and set aside.

Add remaining 1 tbsp butter to the skillet. Add chopped shallots and cook until softened.

Add sliced mushrooms and cook until browned, about 8-10 minutes.

Stir in paprika and cook for 30 seconds. Pour in beef broth, scraping the bottom.

Bring to a simmer and cook for 5 minutes. Reduce heat to low.
