- Gruyère cheese, grated1 cup
- Butter2 tablespoons
- All-purpose flour2 tablespoons
- Milk1 cup
- Nutmeg, freshly gratedpinch

Prepare the béchamel sauce: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened. Season with salt, pepper, and nutmeg.

Assemble the sandwiches: Spread a thin layer of béchamel sauce on one side of each brioche slice. Top two slices with ham, then a generous amount of grated Gruyère cheese. Spread a little more béchamel on the remaining two slices and place them on top, sauce-side down.

Top the sandwiches: Spread the remaining béchamel sauce over the top slice of each sandwich. Sprinkle generously with more grated Gruyère cheese.

Broil: Place the sandwiches on a baking sheet. Broil for 2-4 minutes, or until the cheese is melted, bubbly, and golden brown. Watch carefully to prevent burning.
