- Cooked ham slices4
- Gruyère cheese, grated1 cup
- Butter2 tablespoons
- All-purpose flour2 tablespoons
- Milk1 cup
- Nutmeg, freshly gratedpinch

Prepare the béchamel sauce as described in the Classic Croque Monsieur recipe.

Assemble the sandwiches: Spread béchamel on one side of each brioche slice. Top two slices with ham and Gruyère. Place the remaining slices on top, sauce-side down.

Top and broil: Spread remaining béchamel over the top slices and sprinkle with more Gruyère. Broil for 2-4 minutes until golden brown.

Fry the eggs: While the sandwiches broil, fry or poach two eggs to your liking (sunny-side up is traditional).

Serve: Place a broiled sandwich on a plate and carefully top with a fried egg. Serve immediately.
