Ingredients
- Lamb Shanks4 large
- Olive Oil2 tbsp
- Yellow Onion1 large, sliced
- Garlic6 cloves, smashed
- Lemon1, sliced
- Dry White Wine1 cup
- Chicken Broth3 cups
- Fresh Rosemary Sprigs3
- Fresh Thyme Sprigs3
- Dried Oregano1 tsp
- Saltto taste
- Black Pepperto taste

Preheat oven to 325°F (160°C).

Season lamb shanks with salt and pepper.

Heat olive oil in a Dutch oven over medium-high heat. Sear lamb shanks until browned on all sides. Remove and set aside.

Add sliced onion to the pot and cook until softened, about 5 minutes.

Add smashed garlic, lemon slices, rosemary, thyme, and oregano. Cook for 1 minute until fragrant.

Pour in white wine and scrape up browned bits. Let simmer for 2 minutes.

Return lamb shanks to the pot. Add chicken broth. Liquid should come about halfway up the shanks.

Bring to a simmer, cover, and transfer to the oven.

Braise for 2.5 to 3 hours, or until tender. Turn shanks halfway through.

Remove shanks. Skim fat from sauce. Reduce sauce if desired.

Season sauce with salt and pepper. Serve shanks with sauce and fresh parsley garnish.
