Ingredients
- Cooked lobster meat1 lb, chopped
- Unsalted butter2 tbsp
- Shallots2, finely chopped
- Garlic cloves2, minced
- Tomato paste1 tbsp
- Dry sherry or white wine1/4 cup
- High-quality seafood stock4 cups
- Heavy cream1/2 cup
- Cornstarch (optional, for thickening)1 tbsp
- Saltto taste
- Black pepperto taste
- Paprikafor garnish
- Crème fraîche or sour creamfor garnish

In a medium saucepan, melt butter over medium heat. Add shallots and cook until softened, about 3-4 minutes.

Add minced garlic and tomato paste. Cook, stirring, for 1 minute until fragrant.

Pour in the sherry or white wine and scrape up any browned bits. Let it simmer for 1 minute.

Add the seafood stock. If using cornstarch, whisk it with a little cold water until smooth, then whisk into the stock. Bring to a simmer.

Reduce heat and simmer gently for 15 minutes to allow flavors to meld.

Stir in the heavy cream and chopped lobster meat. Heat through gently for about 5 minutes, but do not boil.

Season with salt and black pepper to taste.
