Ingredients

  • Cooked lobster meat1 lb, chopped
  • Unsalted butter2 tbsp
  • Shallots2, finely chopped
  • Garlic cloves2, minced
  • Tomato paste1 tbsp
  • Dry sherry or white wine1/4 cup
  • High-quality seafood stock4 cups
  • Heavy cream1/2 cup
  • Cornstarch (optional, for thickening)1 tbsp
  • Saltto taste
  • Black pepperto taste
  • Paprikafor garnish
  • Crème fraîche or sour creamfor garnish

Steps

    In a medium saucepan, melt butter over medium heat. Add shallots and cook until softened, about 3-4 minutes.

    Add minced garlic and tomato paste. Cook, stirring, for 1 minute until fragrant.

    Pour in the sherry or white wine and scrape up any browned bits. Let it simmer for 1 minute.

    Add the seafood stock. If using cornstarch, whisk it with a little cold water until smooth, then whisk into the stock. Bring to a simmer.

    Reduce heat and simmer gently for 15 minutes to allow flavors to meld.

    Stir in the heavy cream and chopped lobster meat. Heat through gently for about 5 minutes, but do not boil.

    Season with salt and black pepper to taste.

    Ladle into bowls and garnish with a dollop of crème fraîche and a sprinkle of paprika.
