Ingredients

  • Shrimp4 lbs, head-on, shell-on
  • Smoked Sausage1.5 lbs, sliced
  • Yellow Corn6 ears, husked and halved
  • Red Potatoes2 lbs, quartered
  • Lemongrass3 stalks, bruised and cut into 3-inch pieces
  • Ginger2-inch piece, sliced
  • Garlic1 head, halved crosswise
  • Lime3, halved
  • Waterenough to fill pot
  • Salt1 tbsp
  • Fish Sauce1/4 cup
  • Soy Sauce2 tbsp
  • Brown Sugar1 tbsp
  • Red Chili Flakes1-2 tsp (or to taste)
  • Cilantro1/2 cup, chopped (for garnish)

Steps

    In a large pot, combine water, lemongrass, ginger, garlic halves, salt, fish sauce, soy sauce, brown sugar, and red chili flakes. Bring to a rolling boil.

    Add the potatoes. Cook for 10-15 minutes, until almost tender.

    Add the corn and sausage. Cook for 5 minutes.

    Add the shrimp and lime halves. Cook for 3-5 minutes, until shrimp are pink and cooked through.

    Drain the pot, reserving some of the flavorful broth. Serve the boil immediately, garnished with fresh cilantro and extra lime wedges.
