Ingredients
- Shrimp4 lbs, head-on, shell-on
- Smoked Sausage1.5 lbs, sliced
- Yellow Corn6 ears, husked and halved
- Red Potatoes2 lbs, quartered
- Lemongrass3 stalks, bruised and cut into 3-inch pieces
- Ginger2-inch piece, sliced
- Garlic1 head, halved crosswise
- Lime3, halved
- Waterenough to fill pot
- Salt1 tbsp
- Fish Sauce1/4 cup
- Soy Sauce2 tbsp
- Brown Sugar1 tbsp
- Red Chili Flakes1-2 tsp (or to taste)
- Cilantro1/2 cup, chopped (for garnish)

In a large pot, combine water, lemongrass, ginger, garlic halves, salt, fish sauce, soy sauce, brown sugar, and red chili flakes. Bring to a rolling boil.

Add the potatoes. Cook for 10-15 minutes, until almost tender.

Add the corn and sausage. Cook for 5 minutes.

Add the shrimp and lime halves. Cook for 3-5 minutes, until shrimp are pink and cooked through.

Drain the pot, reserving some of the flavorful broth. Serve the boil immediately, garnished with fresh cilantro and extra lime wedges.
