Ingredients
- Large shrimp, peeled and deveined1 lb
- Sweetened shredded coconut1.5 cups
- Panko breadcrumbs1 cup
- Egg substitute or beaten egg1/2 cup
- Cooking spray or light oil2 tbsp
- Salt1/2 tsp
- Black pepper1/4 tsp
- Sweet chili sauce, for serving1/2 cup
Steps

Pat shrimp dry and season with salt and pepper.

In a bowl, combine shredded coconut and panko breadcrumbs.

Dip shrimp into egg substitute (or beaten egg), then press into the coconut-panko mixture to coat.

Heat cooking spray or oil in a non-stick skillet over medium-high heat.
