- Sushi rice2 cups
- Water2 cups
- Rice vinegar1/4 cup
- Sugar2 tbsp
- Salt1 tsp
- Cooked salmon (flaked)1.5 cups
- Japanese mayonnaise1/2 cup
- Sriracha2 tbsp
- Sesame oil1 tsp
- Soy sauce1 tbsp
- Nori sheets (cut into strips)2 sheets
- Toasted sesame seeds1 tbsp
- Avocado (sliced, for topping)1/2
Steps

Prepare sushi rice as described in the Classic Tuna Sushi Bake recipe.

In a bowl, combine flaked cooked salmon, Japanese mayonnaise, sriracha, sesame oil, soy sauce, and 1/2 tsp salt. Mix gently.

Spread the seasoned sushi rice in the bottom of a greased 8x8 inch baking dish.

Evenly spread the salmon mixture over the rice.

Bake at 375°F (190°C) for 20-25 minutes, until heated through and the top is lightly browned.

Garnish with nori strips, toasted sesame seeds, and fresh avocado slices before serving.
