Ingredients
- Fresh littleneck clams24
- Bacon4 slices
- Panko breadcrumbs1/2 cup
- Green bell pepper1/4 cup, finely diced
- Red bell pepper1/4 cup, finely diced
- Onion1/4 cup, finely diced
- Garlic2 cloves, minced
- Unsalted butter2 tablespoons, melted
- Dry white wine2 tablespoons
- Fresh parsley2 tablespoons, chopped
- Lemon juice1 tablespoon
- Saltto taste

Preheat oven to 400°F (200°C).

Scrub the clams clean. Shuck the clams, reserving the bottom half of each shell. Discard the top shells and any clams that are open and do not close when tapped.

Arrange the clam shells with the meat on a baking sheet. If the shells are wobbly, you can create a bed of coarse salt to stabilize them.

In a small bowl, combine the cooked and crumbled bacon, panko breadcrumbs, diced bell peppers, diced onion, minced garlic, melted butter, white wine, chopped parsley, and lemon juice. Season with salt and pepper to taste.

Spoon the topping mixture evenly over each clam.
