Ingredients
- Onions2 large, thinly sliced
- Fresh spinach1 cup, finely chopped
- Gram flour (besan)1 cup
- Rice flour2 tbsp
- Ginger-garlic paste1 tsp
- Green chilies1, finely chopped
- Garam masala1 tsp
- Coriander powder1 tsp
- Turmeric powder1/2 tsp
- Saltto taste
- Wateras needed
- Oil for deep fryingsufficient
- Curry leavesfew, for garnish (optional)

In a bowl, combine thinly sliced onions, chopped spinach, salt, and mix well. Let it sit for 5 minutes.

Add gram flour, rice flour, ginger-garlic paste, chopped green chilies, garam masala, coriander powder, and turmeric powder to the onion-spinach mixture. Mix thoroughly. Add a little water, only if needed, to form a thick batter that binds the ingredients.

Heat oil in a deep pan over medium-high heat.

Drop small portions of the mixture into the hot oil, frying in batches.

Fry for 6-8 minutes, turning occasionally, until the bhajis are crisp and evenly golden brown.
