Ingredients
- Medium eggplants2 medium, cubed
- Tomatoes2 medium, pureed
- Onions1 medium, finely chopped
- Ginger-garlic paste1 tablespoon
- Green chilies1, finely chopped
- Cumin seeds1 teaspoon
- Turmeric powder1/2 teaspoon
- Coriander powder1 teaspoon
- Garam masala1/2 teaspoon
- Vegetable oil2 tablespoons
- Fresh cilantro2 tablespoons, chopped (for garnish)

Heat 1 tablespoon of oil in a pan. Add cubed eggplants and sauté until they are soft and slightly browned. Remove and set aside.

In the same pan, heat the remaining 1 tablespoon of oil. Add cumin seeds and let them splutter.

Add chopped onions and sauté until translucent.

Add ginger-garlic paste and green chilies, sauté for a minute.

Add tomato puree, turmeric powder, coriander powder, and salt. Cook until the mixture thickens and oil separates.

Add the sautéed eggplant cubes back to the pan. Mix well.

Cover and simmer for 5-7 minutes, allowing flavors to combine.

Stir in garam masala. Garnish with fresh cilantro. Serve hot.
