Ingredients
- Couscous1 cup
- Boiling water1 cup
- Fresh parsley, finely chopped2 cups
- Fresh mint, finely chopped1/2 cup
- Tomatoes, finely diced1 medium
- Green onions, finely chopped2
- Lemon juice2 tablespoons
- Extra virgin olive oil2 tablespoons
- Saltto taste
- Black pepperto taste

Prepare the couscous according to package directions (usually by pouring boiling water over it and letting it steam). Fluff with a fork.

In a large bowl, combine the chopped parsley, mint, diced tomatoes, and chopped green onions.
