Ingredients
- Pre-cooked rice2 cups
- Small pasta (like ditalini)1 cup
- Canned lentils, drained1 (15 ounce) can
- Canned chickpeas, drained and rinsed1 (15 ounce) can
- Jarred tomato sauce2 cups
- White vinegar2 tablespoons
- Garlic powder1 teaspoon
- Cumin1 teaspoon
- Store-bought crispy fried onions1 cup
- Saltto taste
- Black pepperto taste

Steps

Cook pasta according to package directions. Drain and set aside.

In a small saucepan, combine jarred tomato sauce, vinegar, garlic powder, cumin, salt, and pepper. Heat through for about 5 minutes.

To assemble: in individual bowls, layer pre-cooked rice, then pasta, then lentils, and finally chickpeas. Spoon the heated tomato sauce over the top. Garnish generously with store-bought crispy fried onions.
