Ingredients
- All-purpose flour3 cups
- Warm water1 cup
- Salt1 teaspoon
- Olive oil2 tablespoons
- Ground lamb or beef1 lb
- Onion1 medium, finely chopped
- Garlic2 cloves, minced
- Diced tomatoes1 cup
- Tomato paste1 tablespoon
- Cumin1 teaspoon
- Red pepper flakes1/2 teaspoon
- Black pepper1/2 teaspoon

Prepare the dough as in the Classic Gözleme recipe: combine flour and salt, add water, knead, and let rest for 30 minutes.

In a pan, heat olive oil over medium heat. Add chopped onion and sauté until softened. Add minced garlic and cook for 1 minute more.

Add the ground meat and cook, breaking it up with a spoon, until browned. Drain excess fat.

Stir in diced tomatoes, tomato paste, cumin, red pepper flakes, salt, and black pepper. Simmer for 5-7 minutes until the sauce thickens slightly.

Divide the dough into 4 portions. Roll each into a thin circle. Place filling on one half, fold over, and seal edges.

Cook on a lightly oiled griddle over medium-high heat for 4-6 minutes per side, until golden brown and cooked through.
