Ingredients
- Tapioca flour (sweet or sour)1.5 cups
- Milk1/2 cup
- Vegetable oil1/4 cup
- Eggs2 large
- Grated cheese (cheddar or Monterey Jack)1 cup
- Salt1/2 teaspoon

Preheat oven to 375°F (190°C). Grease a mini muffin tin or small baking cups.

Combine milk, oil, eggs, and salt in a blender. Blend until smooth.

Add the tapioca flour and grated cheese to the blender. Blend until just combined and a thick batter forms. Scrape down sides as needed.
