Ingredients

  • Pork belly1 kg
  • White miso paste4 tbsp
  • Tamarind pulp50g
  • Daikon radish1 medium
  • Water spinach (kangkong)1 bunch
  • Tomatoes2 medium
  • Onion1 medium
  • Fish sauce2 tbsp
  • Saltto taste
  • Black pepperto taste
  • Water2 liters

    Boil pork belly in water until tender. Reserve broth. Cut pork into serving pieces.

    In a separate pot, boil tamarind pulp in water, mash, and strain to get tamarind juice. Discard solids.

    In the pot with pork broth, add sliced tomatoes and onion. Bring to a boil.

    Add daikon radish. Simmer until tender.

    In a small bowl, whisk miso paste with a ladleful of hot broth until smooth. Add to the pot.

    Add tamarind juice. Season with fish sauce, salt, and pepper to taste. Adjust sourness and saltiness.

    Add water spinach. Cook until wilted.
