Ingredients
- rolled oats3 cups
- almonds1 cup
- pecans1 cup
- pumpkin seeds (pepitas)1/2 cup
- coconut oil1/2 cup
- maple syrup1/2 cup
- vanilla extract1 teaspoon
- cinnamon1 teaspoon
- salt1/2 teaspoon
- dried cranberries1 cup

Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper.

In a large bowl, combine rolled oats, almonds, pecans, and pumpkin seeds.

In a small saucepan, melt coconut oil over low heat. Stir in maple syrup, vanilla extract, cinnamon, and salt. Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.

Spread the mixture in a single layer on the prepared baking sheet.

Bake for 25-30 minutes, stirring halfway through, until golden brown and fragrant. Be careful not to burn.

Remove from oven and let cool completely on the baking sheet. The granola will crisp up as it cools.

Once cooled, stir in the dried cranberries. Break up any large clumps if desired.
