Ingredients

  • All-purpose flour225g
  • Baking powder2 tsp
  • Salt1/2 tsp
  • Cayenne pepper1/4 tsp
  • Black pepper1/4 tsp
  • Cold unsalted butter50g
  • Mature cheddar cheese100g
  • Fresh jalapeño1-2, finely chopped
  • Milk150ml
  • Egg1 (for egg wash)

Steps

    Preheat oven to 220°C (200°C fan/Gas Mark 7). Lightly grease a baking sheet.

    Sift flour, baking powder, salt, cayenne pepper, and black pepper into a large bowl.

    Rub in the cold butter until the mixture resembles breadcrumbs.

    Stir in most of the grated cheese and the chopped jalapeño.

    Gradually add the milk to form a soft, slightly sticky dough.

    Turn the dough out onto a lightly floured surface and gently pat or roll to about 2cm thickness.

    Cut out scones using a 5-6cm cutter. Place on the prepared baking sheet.

    Brush the tops with beaten egg and sprinkle with the reserved cheese.

    Bake for 12-15 minutes until well-risen and golden brown.
