Ingredients
- Shortbread cookie crumbs1.5 cups
- Unsalted butter, melted5 tablespoons
- Sweetened condensed milk1 can (14 oz)
- Lemon juice, bottled1/3 cup
- Powdered sugar, for dusting2 tablespoons

Line an 8x8 inch baking pan with parchment paper.

In a bowl, mix shortbread cookie crumbs with melted butter until combined. Press into the bottom of the pan.

In another bowl, stir together sweetened condensed milk and bottled lemon juice until smooth.

Pour the lemon mixture over the cookie crust.

Chill in the refrigerator for at least 2 hours until firm.
