- Full-fat coconut milk1/2 cup
- Lime juice3 tbsp
- Jerk seasoning blend2 tbsp
- Garlic cloves, minced2
- Ginger, grated1 tsp
- Brown sugar1 tbsp
- Salt1/2 tsp
- Black pepper1/2 tsp

Cut chicken breast into 1-inch cubes.

In a bowl, whisk together coconut milk, lime juice, jerk seasoning, minced garlic, grated ginger, brown sugar, salt, and black pepper to create the marinade.

Add chicken cubes to the marinade, toss to coat. Cover and refrigerate for at least 2 hours, or up to 4 hours.
