Ingredients
- Peri-Peri sauce1/2 cup
- Honey or brown sugar2 tbsp
- Soy sauce1 tbsp
- Garlic, minced2 cloves
- Salt1/4 tsp
- Black pepper1/4 tsp
- Chicken wings2 lbs
- Mango1 ripe
- Red onion, finely diced1/4 cup
- Cilantro, chopped2 tbsp
- Lime juice1 tbsp

Preheat oven to 400°F (200°C).

Prepare the peri-peri glaze: In a saucepan, combine peri-peri sauce, honey/brown sugar, soy sauce, minced garlic, salt, and pepper. Simmer over low heat for 5 minutes until slightly thickened. Set aside.

Prepare the chicken wings: Pat the chicken wings dry. Place them on a baking sheet lined with parchment paper. Bake for 20 minutes.

Toss the wings in about half of the peri-peri glaze. Return to the oven and bake for another 20-25 minutes, or until crispy and cooked through, flipping halfway.

While wings bake, prepare the mango salsa: Dice the ripe mango. In a bowl, combine diced mango, finely diced red onion, chopped cilantro, and lime juice. Mix gently.

Toss the baked wings with the remaining peri-peri glaze just before serving. Serve immediately with the mango salsa on the side.
