Ingredients
- Chicken1 kg, boneless, cut into cubes
- Onions1 large, finely chopped
- Tomatoes1 large, pureed
- Ginger-garlic paste1 tbsp
- Curry leaves1 sprig
- Vegetable oil2 tbsp
- Ground coriander1.5 tbsp
- Ground cumin1 tsp
- Garam masala1.5 tsp
- Kashmiri red chili powder1 tsp (for color and mild heat)
- Turmeric powder1/2 tsp
- Saltto taste
- Wateras needed
- Fresh cilantrofor garnish
Steps

Heat vegetable oil in a pan. Add chopped onions and sauté until translucent.

Add ginger-garlic paste and sauté for 30 seconds.

Add tomato puree and cook until the oil separates.

Stir in ground coriander, ground cumin, garam masala, Kashmiri red chili powder, and turmeric powder. Cook for 1 minute.

Add the chicken cubes and salt. Sear the chicken for a few minutes.

Add about 1/2 cup of water, cover, and simmer until the chicken is cooked through (about 15-20 minutes). Adjust water for desired consistency.

Add curry leaves and simmer for another 2 minutes.

Garnish with fresh cilantro and serve hot.
