Ingredients

  • Cube steak4 (4-6 oz each)
  • All-purpose flour1/2 cup
  • Onion1 large, thinly sliced
  • Beef broth2 cups
  • Butter2 tablespoons
  • Vegetable oil2 tablespoons
  • Saltto taste
  • Black pepperto taste
  • Water1/4 cup (optional, for thinning gravy)

Steps

    Season cube steaks generously with salt and pepper. Dredge each steak in flour, shaking off excess.

    Heat vegetable oil and butter in a large skillet over medium-high heat. Sear cube steaks for 2-3 minutes per side until golden brown. Remove steaks from skillet and set aside.

    Add sliced onions to the same skillet and sauté until softened and lightly browned, about 5-7 minutes.

    Sprinkle remaining flour over the onions and stir for 1 minute to cook the raw flour taste.

    Gradually whisk in beef broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook until the gravy thickens, about 5 minutes. Season with salt and pepper to taste. If gravy is too thick, whisk in a little water.

    Return the cube steaks to the skillet, nestling them into the gravy. Reduce heat to low, cover, and simmer for 10-15 minutes, or until steaks are tender.
