Ingredients
- Cube steak4 (4-6 oz each)
- All-purpose flour1/2 cup
- Mushrooms8 oz, sliced
- Beef broth2 cups
- Butter3 tablespoons
- Vegetable oil1 tablespoon
- Garlic2 cloves, minced
- Saltto taste
- Black pepperto taste
- Fresh parsley1 tablespoon, chopped (for garnish)

Season cube steaks with salt and pepper. Dredge in flour, shaking off excess.

Heat vegetable oil and 1 tablespoon of butter in a large skillet over medium-high heat. Sear cube steaks for 2-3 minutes per side until golden brown. Remove steaks and set aside.

Add the remaining 2 tablespoons of butter to the skillet. Add sliced mushrooms and sauté until browned and tender, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.

Sprinkle 2 tablespoons of the remaining flour over the mushrooms and garlic. Stir and cook for 1 minute.

Gradually whisk in beef broth, scraping up browned bits. Bring to a simmer and cook until gravy thickens, about 5 minutes. Season with salt and pepper.

Return cube steaks to the skillet, nestling them into the gravy. Reduce heat to low, cover, and simmer for 10-15 minutes until steaks are tender.
