Ingredients
- Ground beef1/2 lb
- Chorizo sausage, casing removed1/2 lb
- Penne pasta8 oz
- Onion, chopped1/2 cup
- Garlic, minced2 cloves
- Diced tomatoes with green chilies, undrained10 oz can
- Chicken broth2 cups
- Corn kernels (frozen or canned)1 cup
- Chili powder1 tsp
- Cumin1/2 tsp
- Saltto taste

- Shredded Monterey Jack cheese1 cup
- Fresh cilantro, chopped (for garnish)2 tbsp

In a large skillet, cook the ground beef and chorizo together over medium-high heat until browned. Drain excess grease.

Add the chopped onion and cook until softened, about 5 minutes.

Stir in the minced garlic, chili powder, and cumin. Cook for 1 minute until fragrant.

Add the diced tomatoes with green chilies and chicken broth. Stir to combine.
