  • Chicken breasts1 lb
  • Southwest seasoning blend (chili powder, cumin, paprika, garlic powder, onion powder)2 tbsp
  • Spicy tortilla chips4 individual bags
  • Canned black beans, rinsed and drained1 can (15 oz)
  • Fire-roasted corn (canned or frozen, thawed)1 cup
  • Avocado, diced1
  • Sour cream1/4 cup
  • Chipotle peppers in adobo sauce, minced1 tsp
  • Lime juice1 tsp
  • Fresh cilantro, chopped2 tbsp
  • Saltto taste
  • Black pepperto taste
  • Water1/4 cup

Steps

    Season chicken breasts with salt, pepper, and southwest seasoning. Cook chicken in a skillet with a little oil until cooked through. Shred the chicken.

    In a small bowl, mix sour cream, minced chipotle peppers, and lime juice to create the chipotle crema. Season with salt.

    Open each spicy tortilla chip bag carefully along the side to create a "boat".

    Spoon the shredded chicken into each bag.

    Add black beans and fire-roasted corn to each bag.
