In a large bowl, combine mashed potatoes, chopped onion, green chilies, cilantro, grated ginger, roasted cumin seeds, coriander powder, garam masala, amchur, and salt.

Mix everything well to form a cohesive dough. Taste and adjust seasoning if needed.

Divide the mixture into equal portions and shape them into flat, round patties (tikkis).

Heat oil in a non-stick pan over medium heat. Carefully place the tikkis in the hot oil.
