- Garam masala1/2 tsp
- Vegetable oil2 tbsp

Wash and roughly chop the spinach. Peel and cube the potatoes into 1-inch pieces. Finely chop the onion, tomatoes, garlic, ginger, and green chilies.

Heat vegetable oil in a large pan or pot over medium heat. Add cumin seeds and let them splutter.

Add chopped onion and sauté until golden brown.

Add minced garlic, ginger, and green chilies. Sauté for another minute until fragrant.

Add chopped tomatoes and cook until they soften and the oil starts to separate.

Stir in turmeric powder and coriander powder. Cook for 30 seconds.

Add the cubed potatoes and salt. Mix well to coat the potatoes with the spice mixture.

Add about 1/4 cup of water, cover the pan, and cook on low heat until the potatoes are tender, about 15-20 minutes. Stir occasionally.
