Remove chorizo from casing and cook in a skillet over medium heat until browned and cooked through. Drain excess grease and set aside.

Wipe out the chorizo skillet. Add vegetable oil and heat over medium-high heat. Place one tortilla in the skillet. Sprinkle half of the tortilla with cheese, then top with scrambled eggs and chorizo. Fold the other half of the tortilla over the filling.
